The challenge

Eldora wanted to know the water impact of its operations: how much washing reusable cups really costs and where kitchen practices waste water.

What we installed

  • Smart Flow Mono & Twin — on the tunnel dishwasher, over-the-range dishwashers and washing stations

What the data showed

13 cl per cup

The water used to clean each reusable cup, measured.

Thawing with hot water

A practice that wastes both water and energy.

End-of-shift peaks

Excess water use at certain times, especially at the end of the shift.

Results

  • Water footprint per reusable cup quantified
  • Wasteful practices identified for staff training

Thanks to Droople's solutions, we have been able to analyze water consumption. We determined the water used to clean the reusable cups: 13 cl/cup. We have identified practices such as thawing with hot water. We have noted excessive water use at certain times, especially at the end of the shift.

The takeaway

In a kitchen, the biggest savings come from habits, and habits only show up in the data.
